Why is there melted butter in the microwave?

Do you know what happens when you forget to add butter to your cookies? Disaster, right? Surprisingly, not so. Tonight I made these cookies and thought “hmmm, the batter is a little dry.†But, it’s Martha, so on with the baking I went, not realizing my mistake until about an hour later when I find the two sticks of extremely melty butter in the microwave. To my (and Bob and Shelbs) amazement, the cookies are totally edible. (To quote Shelbs “how much healthier do you think those cookies are without butter? They don’t even taste that bad.†How’s that for a ringing endorsement?). Chewy, not cruchy with a very tasty chocolate and coconut-y flavor. Though, time will tell – they very well could be cookie shaped bricks by morning.
You guys are busy! Knitting. Cooking. Reading. Knitting. Movie watching. Again, knitting. I just love to hear what you are all up to! It’s been far too long since the last contest, we really need to have these more often. Not only are they fun and interactive, they are just one of the ways I can think of to say thank you!!!

same thing happened to me once when i made a peach crumble last year. the next morning my husband posed the same question when he went to heat something up. never even missed it!

I’m doing that No Knead Bread thing. Once I got over the intimidation factor over the rise time. I tried it this weekend, mixed at noon, baked the next morning and it was really great. Today I’m baking at dinner time. Its been mixed up since bedtime last night.
